Meatless Tacos (with chickpeas)

Have you heard of Taco Tuesday and/or Meatless Monday? Of course there’s no need to follow them, but it’s kind of fun to enjoy them once in a while. Today, we decided to combine the two and have some Meatless Tacos!

Here is the recipe for our Meatless Chickpea Taco.

INGREDIENTS:

  • 1/2 can chickpeas (rinsed and drained)

  • 1 tbsp nutritional yeast

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1/4 cup ketchup

  • 2 whole wheat tortilla

  • 1/2 cucumber (sliced)

  • 1/2 red onion (sliced)

  • 5 cherry tomatoes (halved)

  • 1/4 cup yogurt

  • 1 tbsp dried dill

  • 1/2 tsp chili powder

DIRECTIONS:

  1. Preheat the oven to 375°F.

  2. Toss chickpeas with nutritional yeast, garlic powder, onion powder, smoked paprika and ketchup.

  3. Line a baking sheet with parchment paper, and place the seasoned chickpeas on the baking sheet.

  4. Bake until crispy (~15 minutes).

  5. Heat up tortilla.

  6. On the tortilla, add the cooked chickpeas, sliced cucumber, sliced red onion, and halved cherry tomatoes.

  7. In a small bowl, mix yogurt, dried dill and chili powder.

  8. Pour the yogurt sauce on top of the taco and garnish with greens.

Chickpeas are also called garbanzo beans, and are often consumed as hummus, a dip made of cooked mashed chickpeas. Studies show that chickpeas and hummus may be beneficial for weight management, glucose regulation, and cardiovascular markers.
