Kimchi Pork Stir-fry

With the popularity of fermented food, Kimchi is becoming more common at stores and restaurants. Have you tried it yet? Kimchi is a traditional Korean dish and is made by fermenting vegetables with lactic acid bacteria. Studies show that fermented foods may have health benefits such as antioxidative and antiaging effects.

Since Kimchi is high in sodium, we like to use it in cooking instead of eating on its own. How about our Kimchi Pork Stir-fry for dinner today? Here is the recipe:

Kimchi Pork Stir-fry

INGREDIENTS:

  • 3/4 lb pork loin

  • 1/4 lb pork belly

  • 1 tbsp sesame oil

  • 2 tsp sesame seeds

  • 1/2 tsp salt

  • 1 tsp soy sauce

  • 1 tbsp vegetable oil

  • 3 cloves garlic (sliced)

  • 1-3 tsp chili sauce (optional)

  • 1-2 tsp fish sauce (optional)

DIRECTIONS:

  1. Cut pork loin and pork belly into thin 1/4-inch strips.

  2. In a bowl, mix sesame oil, sesame seeds, salt, and soy sauce.

  3. Add pork strips in the bowl, mix well, and set aside to let them marinate.

  4. Heat vegetable oil in a wok over medium heat.

  5. Add sliced garlic and cook until fragrant (~30 seconds).

  6. Add 1 cup Kimchi and cook for ~1 minute.

  7. Add the marinated pork and cook for ~2 minutes.

  8. Season to taste with chili sauce and fish sauce. Serve it with some rice, sliced carrots, lettuce and onions on the side.
