Zucchini Shrimp Pancakes

Zucchini Shrimp Pancake

INGREDIENTS:

  • 1 ½ cup grated zucchini

  • ½ cup grated carrot

  • 1 egg

  • 2 cloves garlic (minced)

  • 4 tbsp rice flour

  • ¼ cup minced shrimp

  • Salt and pepper to taste

  • 1 tbsp avocado oil

  • Handful of greens (we used baby spinach)

  • Chopped chives, sour cream, cooked shrimp for topping (optional)

INSTRUCTIONS:

  1. Combine zucchini, carrot, egg, garlic, rice flour and minced shrimp. Add salt and pepper to taste.

  2. Heat oil in a pan. Pour spoonful of the pancake mix on the pan and cook at medium heat for 1-2 minutes.

  3. Flip and cook for another 1-2 minutes.

  4. On a plate, place the pancakes on some greens (we used baby spinach).

  5. (optional) Sprinkle some chopped chives, pour sour cream on top, and decorate with cooked shrimp.
